Phenolic Compounds, Antioxidant Capacity, and Protein Content of Three Varieties of Germinated Quinoa (Chenopodium quinoa Willd)

Quinoa (Chenopodium quinoa Willd) is a pseudocereal with high nutritional potential and significant content of bioactive compounds, which consumed mainly by the inhabitants South American Andes. The aim this study was to evaluate protein content, total phenols, antioxidant activity grains Salcedo INIA, Pasankalla, Negra collana varieties, germinated for 24 48 hours at 35 °C. Organic were grown in Andahuaylas province Peru, an altitude 3582 m. determined through Kjeldahl method, turn, spectrophotometry Folin-Ciocalteu reagent, DPPH type registered. data analyzed Analysis Variance (ANOVA), Tukey test, Pearson’s correlation 5% significance. showed considerable increase (p < 0,05) their phenolic activity, as well strong positive size sprouts during germination time. Therefore, could be considered promising product human nutrition health.
